Hi, just bought a new 2025 with the factory grabbers 275/70/18. 116s .
Want to get pure winters but everything is 10 ply. Is it ok to run 10 ply even though the door sticker says only 116s?

Yep.. lots do. You do you boo! Just run the appropriate pressure for the tire and not what the door sticker says.. Many jump to an E rated tire like the KO3 and they require higher pressures than the stock116s

What about using my 275/65/18 from my previous f150 XLT on the Tremor ? Or is that going to mess around with the speedo and possibly warranty?

you wouldn't really see a change in speedo unless you jumped to a 35. no effect on warranty
